Our final Merry Night before we welcome Spring is one that's especially close to home.

This evening is a celebration of the remarkable native ingredients that have nourished this land for thousands of years.

Australia is home to one of the world's oldest continuing food cultures, and while this menu isn't intended to recreate traditional Indigenous cuisine, it is our way of celebrating some of the extraordinary native flavours that continue to grow all around us.

 Expect native herbs, bush spices and seasonal produce, thoughtfully prepared with the same curiosity and respect that inspired our travels through Okinawa. Just as we travelled to learn from another culture's connection to food, we're reminded that there is an incredible food story right here at home.
