Chef Thuong Dang brings over two decades of International culinary experience to the kitchen at North Nowra Tavern.

 

Beginning his career in 1998 washing dishes, Thuong worked his way through the ranks, training on Sydney Harbour with Matilda Cruises before moving into five-star hotels and hatted restaurants. His journey has taken him from Hayman Island to London’s prestigious Dorchester Hotel, and on to Montreal, where he worked alongside renowned chef Fred Morin at Globe restaurant in Montreal Canada—shaping a refined, globally influenced approach to cooking.

Now an Executive Chef with more than 12 years in the pub sector, Thuong combines fine dining technique with a passion for approachable, high-quality food. Currently part of the O’Hara Group, he leads the kitchen at North Nowra Tavern with a focus on consistency, flavour, and showcasing the best of modern pub cuisine.
